Three blades divide the work: the clip for general cutting, the sheepsfoot’s straight edge and blunt spine for controlled push cuts against a surface, and the spey’s flat edge and rounded tip for scraping without a point to puncture. 1065 carbon steel takes a keener edge than stainless and comes back faster on a stone, developing a patina with use that slows further rust once established.
